The socks are knitted from top to bottom in stockinette stitch with an hourglass heel and foot-shaped toe. A temporary cast-on is cast on and after the stockings have been knitted, the stitches from the cast-on are picked up and the folded edge is sewn on the wrong side. The reason this is done this way is to preserve the elasticity of the edge. 

If you want to adapt your size, you must choose based on the circumference of the foot and follow the specified number of stitches. You can then follow the cm measurement based on the length of your foot.  

Do you have e.g. a wide foot, but if it is a size 37 in length, you can therefore knit according to size M in circumference with length measurements from size S. You can also adjust the length of the foot by measuring your foot from heel to toe and then pulling the from the measurements for the toe specified in the recipe. This gives you the exact length you need to knit before you start the incs for the toe (note that it is measured from the middle of the heel).
